Shakshuka is the kind of dish that rewards good eggs. With cage-free eggs from the Villa Market chiller, ripe tomatoes from our produce section and a little crumbled feta from the cheese counter, it comes together in one pan in about half an hour.
Method
- Warm olive oil in a wide pan over medium heat. Soften the onion and pepper for 6–7 minutes.
- Add the garlic, cumin and paprika and cook for 1 minute until fragrant.
- Stir in the tomatoes, season with salt and pepper, and simmer for 8–10 minutes until thick.
- Make four wells in the sauce and crack an egg into each. Cover and cook for 5–6 minutes, until the whites are set and the yolks are still soft.
- Scatter over the feta and herbs. Serve straight from the pan with warm bread.
Tips
- For a richer sauce, add a spoon of tomato paste with the spices.
- Want it heartier? Fold in spinach just before adding the eggs.
